The Case of a wine cellar

The case of the wine cellar or a dozen wines for all times

Its cheaper by the dozen, for an everyday wine cellar, all you need are strong shelves, a cool spot and 12 bottles (one case) of wine. Always keep a bottle of sparkling wine and a bottle of white ready to drink in the refrig. Between that and the 10 in the rack, youll have a case that is ready just in case.

dozen any time wines - 3 Whites and 3 Reds
Three bottles each of Cabernet Franc (Cab-er-nay Fronc) and Chardonnay (Shard-don-a) or Pinot Grigio (Pee-no-Gree-gee-oh). Great all-purpose wines for almost any occasion. These should be simple Virginia wines you'd be just as happy drinking with a weekday dinner. Others- For whites, a Seyval Blanc (Say-voll-Blonc), Viognier (Vee-on-yea) or a Chardonnay is a good choice; if it doesn't have too much oak, it pairs with everything and works in any sauce. For red, a Virginia Cabernet Franc or Chambourcin (Sham-boor-san) are versatile to cook with and easy to drink.

Special White
Like that Virginia Gold Medal Chardonnay or Viognier youve been dying to try.

Wild White
Riesling (Reez-ling) or a soft white blend like Veramar Tres Blanc that goes wonderfully with Asian flavours or other ethnic spicy foods.

Special Red
A heritage blend or as we say here in Virginia, Meritage, an interesting Cabernet Franc, Sauvignon and Merlot blend that makes a red Bordeaux for a great pasta wine.

Big Red
Wine for that night you feel like plopping a steak on the grill. This can be full-bodied Cabernet or a Norton, --or whatever chewy red you like with red meat.

Ice, late harvest or dessert wine
Virginia has some excellent wines in this area, the late harvest Vidal Blanc (Vee-doll-Blonc) works great.

Sparkling Wine.
Brut (Broot) a sparkling blend of Chardonnay and Pinot Noir. Usually dry.
One goes in the fridge for a spur-of-the-moment celebration.

Now, that's a case you can solve. The beautiful part is you get to have wine on demand, and you only need to replenish, as your stash gets low and most Virginia wineries offer a discounts on a case- cheaper by the dozen. Cheers!

Wine Making Tips from Andre: Fruit Wines and Fruit Winemaking -Part 1 of 2



Once again we have advent of the summer season in Western New York and Ontario and while some home winemakers limit their endeavors to the grape, others, including myself, anxiously await the arrival of the fresh fruit. Once dismissed out of hand by some as inferior and often quaintly referred to as "country" wines, fruit wines are enjoying a surge in popularity never seen before, embraced by amateur and professional vintners alike.


And why shouldn't they? Our region has the good fortune to possess a burgeoning agribusiness in fruit other than grapes and, as many fruit farmers have discovered (as indicated by the surge in farm winery licenses), wine returns a much more appealing margin than fruit alone. For those who are still on the fence about the virtues of fruit wine, may I suggest that you take a day to tour some of the local wine trails and try them.


For me, a family outing to the local fruit farms, especially a "U-Pick," was always gleefully anticipated as a summertime ritual. The delicious baked goods and the jellies and jams made from the fruit could be enjoyed into the cold winter months. That is, of course, if they lasted that long.


We still make and love all these things, but taking the extra time and expense to produce wine from the strawberries, cherries, raspberries, blueberries, peaches, and other fruits adds another dimension that will challenge and hone your skills. This is because, unlike grapes (especially those varieties which one may regularly vint year after year), fruits, berries, and other feedstock used to make these wines have less predictable characteristics in their pH, acid, and sugar. Therefore, careful testing and attention to making the proper adjustments is important to producing a good fruit wine.


There is an abundance of websites that have good basic fruit wine recipes, and even recipes to make wine from vegetables and herbs. Simply plug 'fruit wine recipes' into a search engine.


Now for another reason why home winemakers should have a second look at fruit wines. Today, people are more health-conscious than ever. Almost every day for the past decade, starting with "The French Paradox," we've been bombarded with one clinical study after another that touts the health benefits of drinking red wine in moderation.


Well, surprise! The same health-promoting compounds found in Pinot Noir are found abundantly in fruits and berries. The polyphenol pigments that impart color to the fruit are known collectively as anthocyanins, a family of powerful antioxidants. The compound found in Pinot Noir called resveratrol is produced in greater amounts in this varietal as an antifungal because the skin of the grape is thin and susceptible to splitting. Resveratrol has been studied for its ability to block cell inflammation and oxidative stress related to arthritis and other degenerative diseases, as well as cancer treatment and prevention. *


Blackberries, mulberries, and especially blueberries are rich in powerful antioxidants like resveratrol. Blueberries also contain phytosterol and pterostilbene, which have recently been shown to be useful in lowering bad (LDL) cholesterol, preventing heart disease, and protecting the body against certain cancers.


None of these beneficial compounds are lost in the winemaking process, so why not raise a glass of fruit wine and drink to your health?

This is a blend of Dornfelder, Dunkelfelder (rare variety), and Spatburgunder (P. noir). Tons of dark, ripe fruit, which has then been aged in new French oak barriques. Giving the Gift of Wine


The holidays have a way of bringing change: people become cheerier, houses become more illuminated, and turkeys start carrying around Rosary beads, fervently hoping that no one notices them. From the family get-togethers to the meetings with old friends, the holidays are a time for love, joy, and kinship. Yet, before "Peace on Earth and Goodwill towards men" can really begin to solidify, one thing needs to be finished: holiday shopping.

Holiday shopping can bring stress upon just about anyone. If the packed department stores don't unnerve you, a rabid shopping cart to the back of your heel surely will: there's nothing that increases blood pressure quite like a Wal-Mart in December.

However, there are certain gifts that allow for avoidance of long lines, screaming children, and the "Sold Out" signs sure to plague the Tickle Me Elmo section of local department stores. One of these is the gift of wine, a gift that represents friendship, celebration, and so much health that it runs a close second to giving a kidney. Because there are a variety of ways wine can be given, it is simply one of the easiest gifts to give and an even easier one to receive. When giving wine, there's no need to keep the receipt.

Wine Clubs

Enrolling a friend, a spouse, or a relative in a Wine Club is one of the most unique gifts you can give the wine lover. For the wine novice, a Wine Club provides education on and exposure to the different types of wine, all the while teaching the drinker that wine does not necessarily come in a box. For the connoisseur, a Wine Club allows the drinker to keep their cellar full as bottles show up on their front porch with the regularity of a full moon. A Wine Club also indulges members with inside information, special deals, wine secrets and exposure to rare vintages.

What's more, Wine Clubs are an extremely easy gift to give. The Internet is swimming with a variety of Wine Clubs, clubs that provide quick and easy enrollment. However, when giving the gift of a Wine Club, keep in mind that some are only allowed to ship to certain states. Thus, be sure that you find one able to deliver to the state where the gift recipient resides.

Personalized Wine Labels

Personalized wine labels are one of those rare gifts that combine emotion and practicability: the bottle's label allows for the conveyance of a personal touch while the bottle's contents allow for enjoyment of a different sense. A personalized wine label is something that can be held onto: long after the bottle is emptied, it can be kept the way cards, letters, and photographs are stored, all retained with the purpose of sentiment. From giving newlyweds a wine bottle that reads, "First Christmas" to giving your parents one that reads, "Thirtieth Christmas," a personalized wine label invites a plethora of possibilities.

From something as small as a wine opener to something as large as a wine rack, anything to do with wine makes a great gift for both the accomplished wine connoisseur and the aspiring wine connoisseur.

For those who already have everything from a wine charm to a set of Riedel wine glasses, from a wine journal to a wine partridge in a wine pear tree, bottles of a favorite wine make great gifts. Because people who love wine - people who replaced their ice box with a wine refrigerator, people who wash their wine glasses with silk cloths, people who named their first born son "Corky" - can never have too much, just giving a nice vintage is always suitable.

Miscellaneous Tips

Giving wine as a gift does possess some risks. Not only do you run the risk of purchasing a bottle and "accidentally" drinking it before you can give it to the recipient, but there is also a slight chance that you will get someone a bottle of wine they don't find particularly appealing. In order to minimize this risk, be sure to buy the recipient the type of wine they like, not the type you like. If you are buying for someone who loves white wine, try to stay away from purchasing red, no matter how cute the Merlot looks sitting on its shelf.

For instances where you are unsure of what wine a person may like, try giving them a wine basket with a variety of wines or a gift certificate to a wine store.

Port, Chardonnay, and Pinot Noir are increasingly becoming the gold, frankincense and myrrh of the modern day, establishing themselves as gifts of the wise. Because the holidays bring about so much stress - preparing for the arrival of in-laws, cooking a turkey dinner, watching for poop as reindeer fly over head - wine can help the giver give something easy and the receiver drink something soothing. As a gift, it's a win-win situation: when it comes to wine, one size fits all.
